My devils hand has mysteriously retracted day and night recently after being out all the time and thriving.
Seems to have a bit of mucus on it. Could it be shedding?

My leathers are normally done in a day

I use a turkey baster to gently blow mine off when in sheds. I was told it mimics the ocean currant and that's how they shed in the wild.

Hmm been a good few days now with no PE
I have two Lobophytum in my tank and only one shows polyps every so often, but they both look healthy. Yours looks healthy so I would not be concerned.

Hopefully it will start coming out soon. With the lights off last night I shone a torch in and it looked shiny?
Its all very normal, maybe try and get a little more flow on it.

That for sure sounds like it's shedding. I'd just let it be. Some will close for a day, shed and be back to normal the next day. Others might close for a week before they completely slough. I wouldn't worry about it. As @SAPPER said, yours looks healthy, so nothing to really be concerned about at the moment. A little extra flow shouldn't hurt either...
