Difference between cold and warm salt water tanks

So, I went to the aquarium of the Pacific today in long beach CA. Supposedly, it's the biggest in the world? There was tons of beautiful fish and corals. Afterwards, I went to my LPS and asked if they had strawberry anemones and I came to realize that the aquarium I went to was mostly cold water tanks.
So, what's the difference between warm and cold tanks? I almost wish I went with cold water. It's probably impossible without a cooler right?

Are they easier to maintain?

The difference is the temp obviously and the inhabitants. Some like it colder and some warmer. Yes, you will need a chiller for a cold water tank or some means of cooling it down.
