How do my digits look?

I started cycling my 65 gallon aquarium. I have had the below posted numbers after doing my tests. I must admit some of these numbers may be inaccurate due to the nonsense of trying to match colered water to a color chart but its close enough.
At this point do I wait to see my ammonia at 0ppm before I boost it up again?
Like wise do I wait for nitrite to go to 0ppm also?
Since there is no livestock in the tank should I not care how high the nitrate goes? Just do a massive water change at the end of the cycle like 75%?
I also have had my skimmer OFF for the most part in this first stage. Ran it for the first day then shut it off since. When would be appropriate time to start that up?

Added ammonia up to 2.0ppm
Added 6oz Dr Tim’s one and only

5-11-19
Tested 2.0ppm ammonia
Added 6oz Fritz Zyme 9

5-12-19
1.0ppm ammonia

5-13-19
1.0ppm ammonia
2.0ppm nitrite
10ppm nitrate
Added 4oz Fritz Zyme 9

5-14-19
.50ppm ammonia
5.0ppm nitrite
20ppm nitrate
Added 6oz Fritz Zyme 9

5-15-19
.25ppm ammonia
5.0 ppm nitrite
40ppm nitrate

Let you ammonia and nitrite reach 0.

Then dose ammonia to 2 ppm again.

I usually do this 3-4 times, until ammonia goes from 2 to 0 in 24 hrs.

Then water changes to get nitrates in line.

Today I tested 0ppm on ammonia but still have nitrite so it appears to be headed in the correct direction. When would be the best time to start up my skimmer?
