Can anyone help explain the math on this if I do it by the Gallon? I just want to make a test batch of 1 Gallon. 500g/12 oz of water - why does it sound like ALOT of salt for so little water?

You want 149g of salt per gallon of water.

Red Sea is claiming you should get those parameters so long as you use 500g at a time
I mixed for 1hr so far & my salinity is only reading 1.015. Should i add more salt?

Your misunderstanding what they are saying. It is 500g or 12 oz of salt mixed into RO water. They do not specify how much water.
I agree it is confusing and worded poorly as they do not even tell you how much water to use in that statement.

You mixed the salt bucket up well before using?

Then added 149 grams of salt to 1 gallon of water?

How are you measuring salinity?
I underestimated my salt so I added more & finally got it to 1.025.
