Going to try the 321 method. Do you use a water pan as well?
I only use the 321 method for pork ribs but this is all comes down to personal preference. Beef short ribs usually have a nice layer of fat on top which helps keep the meat nice a juicy so you can smoke them tender or you can braise them tender. I never use a water pan, spritzing with a solution works just as good I think and gives more flavor.

I have a Cabela's electric smoker. I changed the control to a PID temp control so I could get the temp correct. Been pretty successful at doing ribs. It's warming up in New England so I have to get it out of the garage.:D

BBQ starting tomorrow. First try at beef ribs.
What do beef ribs cost in your area? I paid $6.99/lb a couple of weeks ago. I also like to get the thin cut beef ribs from Sam's. I soak them in Allegro Hot & Spicy marinade for several hours and then throw them on the grill for 10 to 15 minutes. They aren't as tender that way but still really good.

Your water pan is a heat sink first. The added benefit of maintaining a little moisture in your cooker is just and added benefit. And 321 is way too long for ribs. 311, of less if you do go that route. But I’m partial to ribs with a little bite to them so I’m partial to not wrapping at all.

Bark is good. Flavor is good. Wish it was a little more tender inside. They fall off the bone and have a smoke ring. Next time I’ll try 311.

Can’t remember because it’s the first time I ever bought ribs but for a rack and a 1/2 I paid $30. That’s from a butcher though and I know their prices aren’t cheap.
