Tonight’s meal, brisket cooked at 180 for six hours (160*) the 240* to complete. 18.5 hours.

Got a pork butt in the fridge for tomorrow, now weather showing high 30s low 40s in the Am. Have to start the cook around 530-6:00....gonna be chilly.
