I saw that these were on sale and decided to buy since I don’t own one yet. Which one is the best to buy?

98100 and 98103 have different accuracies, .01 vs .1
98100 and 98103 i think have replaceable probes, 98107 does not
98107 is waterproof, not sure about the other two!

I owned the HI98107 which was working fine for reef tank use. Hanna Instruments are promising an extended life over other pH testers as there is a cloth junction which can be pulled out a tiny bit once clogged. However the probe is not replaceable in contrast to the other two options as it seems.

One thing that annoyed me is the size of the HI98107. You can't simply dip the electrode into bottled pH calibration solutions which would work for the other two options. Sure using one-time calibration packs is probably more precise but still annoying.

The thing is: pH electrodes need to be stored in a specific solution as their life span is drastically decreased when they dry out. The cap on the HI98107 is quite useful for this as you can pour some storage solution into the cap so the electrode is submerged in an appropriate solution for a few weeks until it needs to be replaced due to evaporation and to avoid salt creep. I don't know how this works for the other two options.

I personally prefer having a pH probe sitting in my tank 24/7 as I'm more interested in the extremes during day and night and the overall trend, but the hand-held ones are useful if you want to do your own alkalinity test. Just know that they need proper care to work well and that you need to measure at the same time of the day or you will wonder why your pH is all over the place.
