Seriously it all depends on who’s cooking. I love the spicy sauce we can get at some places but as for authentic? I don’t think I’ve had anything actually authentic from either. Just my dads homemade sauce, which he took to the grave haha (recipe, not actual sauce which I’m sure he would have had we let him)

We will agree on that Texas wins hands down at least if I remember it right it was amazing but the last time I had Texas BBQ I was 9...
 
Are you going to cover the patio with a roof? We have one and I keep trying to convince my husband we need to cover it and screen it in so we can sit out there and enjoy the weather when it cools off in the evenings. He said it would cost too much.

Yes, kind of. Half of it will be a pergola that has the clear polycarbonate sheets on the top to keep rain off us and patio furniture. I am going to install a large outdoor 'ceiling' fan as well as perimeter lights.

All you posers arguing over what sauce belongs on BBQ... If you cook it right it doesn't need any sauce! I'm calling in the big guns here: @Kingsley_Reef dry rub and/or marinade then a trip to the smoker right????

Texas has REALLY good BBQ. However, I have had great BBQ in BOTH NC and SC... GA was kind of ....meh... but I did find a good fried catfish place in GA.

@LadyMac and @Calmwaters when I was going to school in St Louis there was the big debate of which barbecue was better St. Louis o Kansas City. It seems the gold standard is Texas , unfortunately I will never know. Since all my exes live in Texas I won’t go.😢

They have covers you can get to protect the fish from critters that might work for your husky. By the way if you mention a dog you must provide a picture of the dog. I think it's in the smorgs rules somewhere...

How about this discussion @kevgib67 steak on a grill or in a cast iron skillet? My brother and cousin use to have some interesting conversations about that one...
Can’t say I’ve had one from a cast iron but I’ve seen it done on the food network and the searing keeps the juices in. I’d eat a ribeye that was cooked on Tim’s driveway without hesitation.
