Raspberry Chipotle Spatchcock on Friday. Smoked BBQ meatloaf (venison, beef, pork) with Mozzarella cheese chunks and Parmesan yesterday. Today we gave the smoker a rest and cooked fire pit Habanero Cherry filets. Stay at home is making me fat.

The meatloaf recipe is pretty basic but full of flavor. This is the first time I tried this recipe and it was a home run. Nextime I will add a touch of garlic in the mix, a little more onion and parmesan.

Beef tenderloin, I never marinade because I don't want to mask the beauty of the rich beef taste. I love our fresh Kansas beef.

Nothing special on the recipe. Salt black pepper, touch of garlic, r butter r smoking cherry habenero and a pinch of our dried habenero from last season. Pull it and let it rest while the Kerrygold Irish butter melts across the meat. Fantastic! The cherry habenero seasoning has a very slight hint of heat and cherry. I just like a little bit bigger bite, something that gets you attention but not to overwhelming.

Terriaki Pork loins with green onion and rice pilaf and a loaded salad with sesame dressing.
Sauteed mushrooms and pineapple going over the pork when its on the plate.

So I had to go to 2 grocery stores this afternoon to search for ribs. Only one store had them and the only thing available was two thick ribs for $6.19. I will enjoy it tomorrow! I love your coral 32g tank. Can you give me a ballpark how many dollars you have in it?

I've done their tri-tips and love them! Would be interested to see how you like the brisket. I just did a local Montana "wagyu" brisket. They say 85-90% "wagyu" genetics. I thought the flat was phenomenal but as the point is inherently fatty I think the fatty wagyu made it a little bit unappealing. Curious if you get the same result
