Just use a real wood fire in an old school barrel smoker like a real man. None of this electric, compressed pelet garbage. At that point you're just using an outdoor microwave.

Ummm... I have a vertical charcoal smoker sir. And a Traeger. But I usually use the vertical.

There is a Mississippi gold that is mustard based. I like ot more as a marinade. But the Southern sweet is very sticky, dark, and sweet, with just a little smoke. It caramelizes very nicely on ribs etc.

Ok, let me put it in some words you'll understand it. Gravy is the only sauce that should be used. Ever.

Medium rare all day. My wife like it well done as well as my step mom, so when I cook for all of us I say "so 2 medium rare, and then just ruin 2?"

I cooked a prime rib, medium rare for Christmas. Bought from a local butcher, not a big box store, most expensive cut of meat i've ever bought. Came out AMAZING. My wife and my step mom had meat cut their's and fry it in a pan after it was done
