How would I detach these mushrooms or should I break the frag plug because it just is too big

Would it be better than cutting the mushrooms off the plug?

Cutting not a good idea, you could try slipping a razor blade under them, but then you have the issue of attaching them to a rock, mushrooms are well known for not sticking to a rock with glue, they can un-attach themselves, then you can either try putting a lasticband around them and the rock you want them to attach too or put them in a mushroom box with some rock pieces and hope they attach themselves to a piece…far safer and less stressful to break the frag plug and hope you don’t cut one in half, then attach that to where ever you want it.
