you can also change the metering mode if you find that your subject isn't exposed the way that you like. for example, spot metering would prioritize the area in focus.
Using AF-C and setting the AF speed to the max(if you can) can also be useful for moving subjects.

When you brighten an underexposed shot you are also brightening the noise. I believe, in theory, you won't see much difference in noise in the final shot whether you A) shoot at a higher ISO with proper exposure or B) shoot low ISO underexposed and raise exposure in post. If you use raw and lightroom you have the chance to do custom noise reduction (if you wish) with either approach.

So since the conversation with @Ben549 you have stopped posting your settings with your shots. Can you update what your settings are that have changed? If you still have the original shots, they should contain the settings in the file information.

I was not trying to imply that you intentionally "hid" the settings, you simply stopped explaining what they were with your more recent photos.

Your photos are clearly getting better and I was simply curious what settings you are using.

I have been working on learning how to use the settings on my own camera so I can more accurately represent what I see to the viewing audience. I have gotten some good shots that I have made even better with lightroom, but I still struggle to get the coloration of my subjects as I see them. Again, lightroom helps, but I have yet to reach that level.
